The history of La Chinata goes back to 1932, when our ancestors began to grind the olives of our region, the Sierra de Gata. At that time, oil was obtained from very rudimentary oil mills. The olives were crushed in the stone mills or stones and a paste was obtained that later was introduced in a press to extract the olive oil. Layers of paste were formed separated by circular plates known as the straws, which were placed in a press, and pressing olive oil was obtained. Afterwards, the oil was decanted to separate the vegetable water, which is what was called water and the remains of olives.More about the Winery
