VINEYARD: Kir Yianni. This vineyard is located in the Amyndeon region in Northern Greece, and has a mean altitude of 700m above sea level. It started in 1997, when Yiannis Boutaris left the family business to follow his own path. With respect of tradition and an eye on the future, this vineyard has rapidly grown into one of the most prestigious in the area.
GRAPES: 80% Roditis, and 20% Malagousia.
AGEING: Three to five months in stainless steel tanks.
PREPARATION: The grapes are harvested manually and separately, and then soaked cold in order to extract more intense aromas from the skins. The must is then clarifies using static debourbage. Fermentation takes place in stainless steel tanks, where selected yeasts are inoculated and batonnage is scheduled regularly. This process is carried out for a period of 3-5 months, before the final blending and bottling is conducted. This adds a level of complexity to the wine that enhances its exquisite nature.
PAIRING: Perfect to be enjoyed as an aperitif, and also serves as a good pairing to salads, fish, and fresh cheeses.
