In 1863, James Burroughs created Beefeater, the only gin produced in the heart of London. For this very reason, he decided to take inspiration for the name from the royal guards protecting the Tower of London, called "Beefeaters". The recipe of this gin has been kept under lock and key for generations, and is passed on only by a master distiller to his successor.

The distillery's headquarters is located at 20 Montford Place, in the Kennington district, and covers about 9,000 square metres between offices, warehouses and production sites.
