PREPARATION: The transformation of wine into sparkling wine requires the addition of sugar and yeast. This results in a second fermentation with carbonic acid and alcohol. Since the champagne bottles are sealed, carbon dioxide cannot escape, which develops the perlage for the future sparkling wine. After the completion of the second fermentation, which usually lasts from 6 to 8 weeks, the crude secco matures for at least 9 to 12 months in optimally warm rooms so that the winemakers can develop the desired flavour and fine pearl.
