Franciacorta Brut Francesco I Uberti is a wine dedicated to Francesco I, King of France from 1515 to 1547, he was the first to attribute value to "sparkling wines" that were considered defective. From that moment he began to understand how to deliberately produce sparkling wines by perfecting second fermentation tecnique. Franciacorta Brut Francesco I Uberti is a "metodo classico" produced with Chardonnay, Pinot Blanc and Pinot Noir cultivated in the family owned Uberti vineyards and other vineyards in the best exposed areas of Franciacorta. The grapes are manually harvested around the end of August and taken to the cellar for soft pressing, the must is clarified and inoculated with selected yeast. The alcoholic fermentation takes place in stainless steel tanks thermo-controlled to a temperature of 16-17 ° C for about 12 days. Subsequently, the base wines are aged on the lees until the period of the cuvee in which the wines are blended and bottled with added sugar and yeast for second fermentation in the bottle for the production of Franciacorta Brut Francesco I Uberti. After 36 months of aging in bottle on the yeast begins the phase of riddling and disgorging, after 6 months of this phase the wine is put on the market.
