“The Fiano di Avellino is a native grape variety of the Irpinia area, included in the Fiano di Avellino DOCG specifications. Feudi di San Gregorio produces a selection of Fiano made with the grapes of the oldest vineyards and also the most suitable for the production of white wine and it named this wine Pietracalda. Grapes are hand-harvested and immediately taken to the winery for pressing. Musts are clarified and inoculated with selected yeasts. The alcoholic fermentation takes place at a temperature between 16ºC and 18ºC. Wine is refined in steel tanks and by extended lees in order to preserve the aromas of this variety. It is aged for 5 months after the harvest and then bottled.”
