TASTING NOTES OF Paul Cluver Estate Dry Encounter Riesling Elgin 2016:
- View: Straw yellow with golden and green hues.
- Nose: Intense sweet notes to a mixture of frutasy other minerals, like ripe green apple. apple blossom, beeswax and honey.
- Mouth: The palate is crisp and clean, with sweet notes of green apple, honey, flowers, lemon, wax and honey. There is a well balanced mix between residual sugar and acidity.
APPELLATION: Elgin.
VINEYARD: Paul Cluver,
GRAPES: Riesling 100%
AGEING: aged in French oak barrels.
PREPARATION: The juice of the grapes received 8 hours contract with the skin before fermentation to extract flavor and reduce acidity. Pressing was smooth and only free run juice was fermented. Everything was done using a yeast strain known for a slow, cold fermentation, in large oak tanks.
WINE PAIRING: It is an excellent accompaniment to fish dishes, salads, white meats and seafood.
TEMPERATURE: 10°-15°C
ALCOHOL CONTENT: 9%
