Description of Paul Cluver Chardonnay 2017
Paul Cluver Chardonnay 2017 (Chardonnay)
- View: It is pale yellow.
- Nose: aroma of fruits such as tangerine and melon, mixed with citrus flowers, notes of buttered toast or brioche and hints of almonds, biscuits, honey and vanilla.
- Mouth: elegant, cool, fine acidity and balanced. With memories of notes perceived on the nose.
VINEYARD: Paul Cluver Wines. It is a family winery, pioneer and leader in Elgin Designation winemaking techniques of sustainable agriculture.
AGEING: the aging process is carried out on its lees for a period of nine months, with no additions of sulfites.
PREPARATION: the harvest is done in about 13 hectares planted varietal, vineyard between 2 and 30 years old. Fermentation process takes place in new French oak barrels 20% and the remaining in barrels of second, third and fourth use. Only 10% of the wine undergoes malolactic fermentation which is carried out without inoculation.
PAIRING: fish, salmon, seafood, poultry, game, pork, creamy pastas, vegetables, mussel soup, spicy food and blue cheese.
RECOMMENDED SERVING TEMPERATURE: 10-12 °C

Good wine to drink between hours.
It was a birthday present for my friend.
We had it with Sushi food.
I tried it on a wine tasting of wines.
Like many Chardonnay it had a light golden brown colour. The aromas of white flowers dominates the rest. Very light.
