APPELLATION: Douro

VINEYARD: Quinta de Pacheca. Lying in the beautiful Portuguese Douro wine region, this winery focuses on producing high-quality port and Douro DOC wines. Seventy-five hectares of Quinta de Pacheca lie within the territory classified by UNESCO as world heritage in 2001. Still family-owned and operated, the winery is now in the hands of the fourth generation of the founding family.

GRAPES: Touriga Nacional, Tinta Roriz

PREPARATION: After being picked in 25-kilogram batches, the grapes are carefully selected and taken to the distillery to be cooled and then pressed. The traditional "Bica Aberta" method is used to create this wine. For this, the grape juice is fermented alone, without the skins. Fermentation is achieved in stainless steel containers at a carefully controlled temperature.

PAIRING: For light dishes, this wine is a perfect pairing. It is great with salad, grilled lean meat, and appetizers. It is also excellent with seasoned fish or sushi as well as with Italian dishes including pizza, pasta, and risotto.
