VINEYARD: The Cadão Douro winery is in S. João da Pesqueira, Portugal. The climate is mostly a continental climate with very cold winters and very hot summers. The soils are a mix of pre-Cambrian schist and archaic, with some granitic spots. The company is very much focused on the origins of its grapes, using vines and estates located in different points of the Douro valley to guarantee the recognition and quality of its wines.
GRAPES: Touriga Nacional
PREPARATION: The grapes are carefully selected according to the maturation criteria. After the wine has completed the first fermentation, it is clarified. The second fermentation is carried out with the addition of wine that contains must and sugar and is done in special containers, under pressure. Once it is finished, the containers are opened and the wine is re-bottled. The whole process is completed with the care necessary to preserve the typical flavour of Cadão Douro wines.
PAIRING: Cadão Blanc Des Noirs Touriga Nacional Brut 2017 is excellent as an aperitif. It is also great with light meals, roasts or even desserts.
