Summa Varietalis 2015 (Cabernet Sauvignon, Petit Verdot and Syrah)

TASTING NOTES:

  • View: a deep and very covered cherry color layer.
  • Nose: Elegant and complex aromas dominated by fruit forest, mineral and spicy tones and a touch earthy.
  • Mouth: full, fleshy, structured and rich tannins. Persistent and balanced.

APPELLATION: Domain Valdepusa.

VINEYARD: Village Olive Family Estates.

GRAPES: Petit Verdot, Cabernet Sauvignon, Syrah.

AGEING: Aged in French oak barrels new and used Allier for 12 months on a ship breeding heated. Wine is not subject to clarification or filtration.

PREPARATION: Manual harvest, followed by stripping and discharge by gravity into the fermentation tanks. Maceration extended to 4 or 5 weeks.

WINE PAIRING: Ideal to accompany meats and game, rice, pasta, cheese and other dishes of Mediterranean cuisine.

RECOMMENDED SERVING TEMPERATURE: 16 ° C

I bought it at the wine cellar of Pagos de Familia de Marqués de Griñón.
Typical opacity of a Pagos de Familia de Marqués de Griñón. The Summa Varietalis exudes aromas of violets. I got the impression that it was a well-bodied wine.
