TASTING NOTES:
It has an intense purple hue and a nose rich in red and black berries, harmoniously combined with notes of eucalyptus, pine and pine needles with hints of oak and spice. On the palate, a firm attack and austere tannins, revealing splendid balance and elegance, fine acidity and a noteworthy minerality that imparts freshness and confers the wine its exceptional potential as a fine food match.
- Winemaker: Manuel Vieira
- Winemaking: The grapes for this wine were set apart by selecting and harvesting plot-by-plot and vinified in individual batches. Grape bunches were unloaded from 20 kg boxes directly into the crusher-destemmer, with grapes falling, by gravity, into the small stainless steel vats in which they underwent 8 days of alcoholic fermentation at a controlled temperature of 28ºC, followed by 20 days of post-fermentation maceration. Malolactic fermentation was followed by 12 months of maturation in new French oak barrels, sourced from nine different cooperages. Over the entire duration of this maturation, repeated tasting of individual lots led to a precise idea of their evolution, allowing for a selection of only the best casks with which to develop the final blend. This blended wine was then subject to fining and filtration before bottling.
- Grape Varieties: Touriga Nacional.
- Food Pairing: Excellent choice to accompany fine meats, game, and intense cheeses.
- Store and Serve Advices: Like most red Dão wines, it has an extended bottle life, easily retaining its character for as long as 10-15 years. Once open, the wine should be enjoyed within a day, although it will keep for some time if properly sealed. The bottle should be kept on its side, in a cool, dry place. Sediment will form naturally over years of bottle-ageing and decanting is recommended. Once open, the wine should be enjoyed the same day, in large wine glasses which allow the wine to breathe. Serve between 16ºC-18ºC.

Wine of the Region of Dão, made solely from grapes from the best plots at Quinta dos Carvalhais, especially Touriga Nacional. It has a very deep violet hue and a complex, fairly intense bouquet showing all its youth. Of special note are its ripe red fruits tones, harmoniously combined with hints of eucalyptus, menthol and spices. In the mouth it shows an intense structure of fine body, with an extremely well-balanced acidity, in conjunction with robust and yet soft tannins that are noticeable trough out the tasting. Ripe fruit and fresh marmalade flavours contribute to a long and intense finish, where French oak wood is also remarkable. Excellent with fine meat, game and intense cheese.

I bought it at the vineyard store of Quinta Dos Carvalhais.
Red towards reddish brown hints. If you are a fan of red fruit compote, then this wine is perfect for you. It was fleshy.
