VINEYARD: Long forgotten and endangered the Melissaki now produced in the vineyards of the family winery Gerodeti.

Located on the largest Greek island (Crete), this area operates varieties of high clay soils.In addition, the vines enjoy a good solar radiation intensity (supported by dry winds) and a softening thanks to the proximity of the sea.GRAPES: 100% Melissaki.

AGEING: The wine is aged in oak barrels and recent vats for a period of 4 months.

PREPARATION: manual harvesting is preferred to ensure the quality of selected grapes.Most of the grapes are subjected to a traditional fermentation of white wine, while the rest undergoes a spontaneous fermentation in oak barrels. Only organic yeast is used to ferment and stabilize the wine.

PAIRING: vegetables, yellow cheese, salads, seafood appetizer.

Bright yellow-greenish color with intense herbal scents in a lemony background. Round mouth sense with remarkably dense texture and citrus aftertaste. This is a remarkable experimental wine based on the forgotten grape variety Melissaki that is scattered in old vineyards at the foothills of Psiloritis.
