M. Chapoutier Côtes-du-Rhône Belleruche Blanc 2018 (Bourboulenc, Clairette, Grenache Blanc, Viognier and Roussane)

TASTING NOTES:

  • View: bright golden yellow.
  • Nose: Intense and expressive aromas of apricot, fennel and floral scents (iris).
  • Mouth: Complex and very elegant, round, fresh, subtle notes of anise.

APPELLATION: Côtes du Rhône.

VINEYARD: implemented mainly in rocky slopes marl and clay and limestone, these soils are draining with a regular water supply without excess.

GRAPES: White Grenache, Roussanne, Viognier, Clairette and Bourboulenc.

AGEING: Aged for 5 months on lees.

PREPARATION: night to limit the oxidation of juice and aromatic substances preserve crops. They heat up quickly in the spring and therefore favor the maturity of the grapes. I despalillado total followed by a light maceration of the skin especially for Viognier, soft pressing. Racking by cold. alcoholic low temperature and stainless steel fermentation tanks. Protection against oxygen wine to preserve its aromatic potential.

TASTING NOTES OF M. Chapoutier Belleruche Blanc 2017:
- View: limpid pale yellow.
- Nose: aromas of green apple, hawthorn, white flower, citrus and exotic fruits.
- Mouth: fresh, well balanced, oily and with great length.

APPELLATION: Côtes du Rhône.

GRAPES: Grenache, Clairette, Bourboulenc.

PREPARATION: prepared according to the methods of biodynamic farming. Grapes squeezed immediately fermentation temperature between 16 and 20ºC.

PAIRING: trout, almonds, goat cheese.
