APPELLATION: Côtes de Provence.
GRAPES: Grenache, Cinsault, Syrah, Vermentino and Carignan.
PREPARATION: grapes harvested from the early morning until noon. Selected grapes, destemmed and slightly flattened at 7-8 ° C to prevent oxidation. Free press juices are vinified and pressed in stainless steel tanks, batonnage twice a week, controlled temperature.
WINE PAIRING: fish soup, sea fish like mullet grilled, tuna, sea bream or sardines or salad nicoise and cold vegetables of the Mediterranean.
