AGEING: aged in yeast.
PREPARATION: for this wine are used optimally ripe grapes, which come from plots of land that are subject to the so-called green crop (measured to reduce the yield per hectare). After the stripping, the grapes are left in contact with the wort for several hours. After clarification, the best parts of the grape juice ferments together at controlled temperatures.
