TASTING NOTES Hollick Ravenswood 2008:

  • View: dark crimson red black completely opaque.
  • Nose: scented fragrance of ripe black currant and dark plum, black chocolate, a hint of mint, cedar and spices.
  • Mouth: full-bodied, flavors of ripe black currant and black chocolate, a background of cedar, cigar box and some spices.

- Dense crimson with purple hues at the rim.
- Distinctly Cabernet! The nose is a complex amalgam of blackcurrants, plums, cassis, black olives and chocolate.
- The palate is deep, complex and brooding with layers of flavour. Blackberry, dark plum, mulberry and cassis are supported by notes of mocha and graphite. The rich and round mid-palate is backed up with a core of minerality and an abundance of super fine tannins.
- The finish is long and pronounced with classic balance and structure.
- The best parcels of Cabernet Sauvignon from the Hollick vineyards are earmarked for Ravenswood and experience tells us that this fruit will typically come from the oldest vines growing in the very shallow terra rossa soil over limestone on the Wilgha and Neilson's Block vineyards. These vineyards are linked by Ravenswood Lane.
- Early spring rains in Coonawarra after a dry winter promoted excellent budburst and flowering. The cool conditions in February allowed good flavour development before the heat of March hastened ripening. The vintage yields were below average, with the fruit showing intense colour and rich ripe flavours.
- The grapes were picked at optimum flavour and tannin development and balanced natural acidity. Once in the winery the utmost care was taken to preserve the fruit characters developed in the vineyard. The wine was then matured for a further 18 months in tight grained French oak barriques.

- An intense and brooding wine with layers of dark purple fruit over olive, cigar box and coffee.
