VINEYARD: Charles Smith Wines. Located in Columbia Valley in the state of Washington, U.S., this is one of the largest producers in the area. Famous for making affordable wines, the quality is such that has made him worthy of many recognitions and awards. Sustainable practises and recycled water are the policy of this house.
GRAPES: 89% Merlot, 10% Cabernet Sauvignon, and 1% Malbec.
AGEING: Aged for 10 months in French oak barrels, 30% new and the remaining are used.
PREPARATION: As a self-taught wine-maker, Charles Smith's process is very raw. The grapes are collected and subjected to a long maceration process that lasts 30 days or more without removing the skins. The must then undergoes malolactic fermentation, without racking at the end. The ageing is conducted on the lees, and once the wine is ready, feel free to enjoy it in any way you want.
PAIRING: Ideal to accompany beef, lamb, veal, and some more unusual and bold combinations such as hamburger and grilled steak.
RECOMMENDED SERVING TEMPERATURE: 16-18°C
