VINEYARD: Marchese Antinori. The family have been artisans of winemaking since 1385, when the first such Antinori became a member of the Florentine Winemakers' Guild. This historic wine has been produced from the grapes of the Tignanello estate since 2011. The estate lies between the valleys of the Greve and Pesa rivers, in the very heart of Chianti Classico country.
GRAPES: 90% Sangiovese, 10% Cabernet Sauvignon
AGEING: One year in French and Hungarian small oak barrels before blending. A further year of bottle ageing.
PREPARATION: Spring 2016 began with fine weather, leading to bud break ten days earlier than average. Storms and cool days in early summer did not prevent vibrant growth or healthy harvest. After soft destemming and pressing, the must fermented for a week in stainless steel tanks. Soft techniques (pumping over and délestage) in handling skin contact ensured supple, elegant tannins despite intense extraction.
PAIRING: Pastas with meat sauces; game; roasted red meats; strong cheeses. Try with Venison Bourguignon or Baked Garlic Pork Tenderloin.
