TASTING NOTES OF Ruinart Blanc de Blancs 2004:
- View: light gold.
- Nose: generous sweet notes of chestnut, coconut and fresh bread, cookie aroma space quickly essences of flowers (lily, iris and orange blossom Seville) and citrus (bergamot and lemon). Just below the surface, several mineral notes (wet and chert rock) and iodized salt.
- Mouth: silky straight home but backed by mineral notes, fresh citrus, with hints of gentian. Very long finish with notes of grapefruit and kumquat, with light saline touch.
PAIRING: grilled lobster, grilled razor clams, risottos, baked salmon.
TEMPERATURE: 7-9 °C.
