Pol Roger Brut Blanc de Blancs 2012 (Chardonnay)
TASTING NOTES:
- View: vibrant yellow, a remarkable effervescence.
- Nose: fresh butter, quince notes, citrus, floral notes, and finally lightly toasted brioche aromas
- Mouth: balanced, distinctive flavors of citrus, brioche, candied peel and acacia honey. Final with remarkable length and body.
APPELLATION: Champagne.
GRAPES: 100% Chardonnay.
PREPARATION: wort subjected to two decanting, one immediately after pressing and the second a cold transfer, in stainless steel to 6 ° C for a period of 24 hours. A slow cool fermentation with the temperature maintained below 18 ° C is carried out in stainless steel. Each variety and each zone are kept separate. The wine undergoes a complete malolactic fermentation before the final mixture. The second fermentation takes place at the bottle to 9th C in deep basements Pol Roger (33 meters below street level) where the wine is kept until removed undergoes a hand.
WINE PAIRING: turbot, fried grilled, served with a hollandaise sauce and fresh vegetables.

Gorgeous. Yeasty smell. Short aftertaste.
We had it with a birthday cake.
