AGEING: 6 months in stainless steel casks on its lees.PREPARATION: The grapes are harvested by hand and transported in wooden crates to preserve its integrity. The alcoholic fermentation takes place in stainless steel barrels at controlled temperatures of 15 to 18 °C. Composed entirely of Chardonnay from Grands Crus, 75% from the Côte des Blancs and 25% of the northern slopes of the Montagne de Reims, the Dom Ruinart 2007 has a light color, a deep gold with shimmering green reflections . The beautiful Dom Ruinart cool it a magnificent champagne aperitif. Mellowed by a few months of aging, he will marry dishes where sea and iodine notes will play with its minerality.
