Dom Ruinart 2007

This vintage's nose reveals the sweet, gentle notes of chestnut, coconut and fresh bread This biscuity side to the wine very quickly gives way to the aromas of flowers (iris, lily-of-the-valley and the flowers of Seville orange trees) and citrus fruits (bergamot and citron) Just beneath the surface several mineral (wet rock and flint) and iodised saline notes make their appearanceOn the palate this vintage is initially direct but silky, sustained by mineral notesThe ephemeral nature of the Dom R

TASTING:
- View: a sparkling dress, a yellow gold with delicate green bronze reflections, an effervescence of great finesse and a foam of a remarkable abundance for this year are the beginnings of a tasting unusual.
- Nose: and mineral very racy, the first nose highlights the ripeness of the vintage 1998 in a fresh honey register, white nougat and candied citrus. The evocations of p̢tisserie and dried fruit in the second nose confirms the announced sweetness, originally of great aromatic complexity.
- Palate: The palate is full and particularly silky. The fruit flavors dominate, but in a richer register, with a touch of candied fruit and nuts. Mangoes, kumquats, almond, hazelnut

Softness and drought characterize the wine year 2004. The spring and summer are marked by beautiful warm and sunny periods. And even if some rain disturb late August, the dry wind and good weather in September to allow the grapes to ripen in excellent conditions. A month of September is ideally sunny originally a perfectly ripe grapes having kept a very good level of acidity. The grapes harvested during the second half of September, have arguably the best balance from the great 1996 vintage.
The nice cool Dom Ruinart 2002 did a wonderful aperitif Champagne. Mellowed by a few months of aging, he will marry dishes where sea and iodine notes will play with its minerality: Walnut St. Jacques thinly sliced marinated seaweed, tomato water jelly or prawns marinated and light cream bark kombawa. Born of a great vintage, the 2002 Dom Ruinart advantageously retained in the cellar to be enjoyed after several years of additional aging for many years and enjoyed at table with dishes with intense flavors.

Fù who was born in 1729 "Ruinart", one of the most renowned fashion house of France by Dom Thierry Ruinart. He has dedicated this superb cuvée Blanc de Blancs "Dom Ruinart", obtained from carefully selected grapes from the best plots of vines of the historic production area of Champagne. Really unusual such a light and aromatic structure is able to unite the absolute level gustolfattive experience, starting from the common bread until going into incredible chestnut notes. A Champagne that comes from every possible evaluation scheme. Potentially would also be forgotten in the cellar for twenty years without any loss, anzi..Annata 2006. Its tension with rounded corners creates a foam veil that reveals very rich aromas of freshness. The scents of fresh flowers give the wine a delicacy that mitigates that austerity waiting; this is not a defect, but rather a hallmark. At a perfumer evokes notes of reseda, care to its preparations.

Dom Ruinart Blanc de Blancs 2007

Tribute to Dom Thierry Ruinart, visionary, the origin of the foundation of the Maison, the Champagne Blanc de Blancs cuvée Dom Ruinart is exceptional. A rare wine, the highest expression of the Grands Crus of the most noble Chardonnay, offering extraordinary tasting experience: 63% of the Côte des Blancs (predominantly Chouilly, Avize and Le Mesnil) and 37% of the northern slopes of the Montagne de Reims (predominantly Sillery and Puisieulx). A perfect combination that gives this vintage opulence and freshness, power and finesse. Featuring a bright straw yellow color and a particularly fine and persistent perlage, this champagne is expressed on the nose with a very soft and elegant bouquet, ethereal. His notes, fresh and delicate, complemented by lightly toasted brioche aromas and are typical of the Dom Ruinart style. The final, characterized by a pleasant citrus note, gives silky and refreshing acidity. Perfect to accompany elaborated dishes based on fish and shellfish.

Reminds me of other sparkling wines, aromas of yeast. All Ruinart wines are quite balanced.
I loved the touch of wood.
