TASTING NOTES OF Dom Ruinart 2006:
- View: Pale yellow green, silver highlights.
- Nose: very fresh fruity palette, mixed notes, floral: citron (very sweet citrus), fruit (brugnon, yellow plum), white fruits, linden and lily of the valley and spicy notes "green".
- Mouth: the same very fresh and delicate notes, complemented by lightly toasted and brioche flavors, a very tender, elegant, airy balance, a natural sweetness emphasized by a particularly low dosage. Final pleasant citrus notes with silky and refreshing acidity.
GRAPES: 100% Chardonnay.
PAIRING: White fish, poached shellfish, herbs, citrus and a shell accompanied by a creamy element (cauliflower mousseline, fennel puree).
