Champagne Mailly Mailly Nv Brut Réserve Grand Cru

APPELLATION: ChampagneVINEYARD: Champagne Mailly Grand Cru. Their vineyards are located in the French commune of Mailly-Champagne in the Champagne-Ardennes region, District of Reims, northern France. It covers an area of 70 hectares and the soils are rich in chalk. The vines are planted on the slopes of the mountain of Reims, allowing them full sun exposure. The winery was founded in 1929 and belongs to an association of 80 winegrowers.GRAPES: Pinot Noir (75%), Chardonnay (25%).
AGEING: The aging lasts 12 to 24 months, it is done in the bottle on wooden slats in traditional chalk cellars, which provide a constant temperature and perfect humidity level.PREPARATION: The harvest is manual. In the full crushing grapes are pressed. Alcoholic fermentation is made in stainless steel tanks at a temperature of 15 °C. Then the must undergoes malolactic fermentation in a controlled temperature.
