Bollinger RD 1997 (Pinot Noir 62% Chardonnay 38%)

The term RD refers to the practice of recent disgorgement; this wine is essentially La Grande Année, but with the wine left on the lees for an extended period of time, in the case of this bottle more than 10 years as it was disgorged in early 2009. The dosage is lower than for Grande Année, so the finished product is drier. This wine has one of the finest beads I have ever seen, and it has a very fine nose, full and ripe, aromatic and yet full of youthful, fresh, zesty character. It has a very pure and gentle style, fresh and elegant, certainly vivacious and polished. And yet behind this sheen of youthfulness there is a very bold and rather tertiary character. Overall, brilliantly fresh yet also subtly mature. Lovely wine.

Wine particular, the initials on the label means "recently mouthed" is processed only in exceptional vintages, the blend is composed by wines from the 75% from Grands Crus and Premiers Crus by 25%. Of a beautiful crystal clear golden color with a perlage of extreme elegance and finesse. Smell of excellent quality and elegance to the first nose reveals the classic oxidative notes, then expresses nuances of bread crust, ripe and dried fruit, acacia honey, melted butter, candied fruit and spicy notes. The taste is in a phase of full balance, creamy and soft but supported by good freshness that will lengthen the period of pleasantness, the finish is very persistent and almond. exceptional wine body and structure to follow the evolution

- Nose: Complex and elegant. Dried flowers, pear, citrus (lemons), peach, nuts. Fund mineral.

- Nose: It has attractive aromas of caramel and citrus fruits.
- Palate: A mouth attractive, very young, a touch of coffee too, but the caramel is the flavour most obvious

Champagne Extra Brut 1997 Bollinger BOLLINGER not just the champagne of James Bond and Prince Charles of England, also the last champagne house to have preserved its total financial independence. Since its foundation in 1829 on the Montagne de Reims, the Maison Bollinger, direct current from Ghislain de Montgolfier, continues to manufacture and refine his champagne as he has always done in the family! His goal succeed in perpetuating every year the famous Bollinger style embodied by the "Sp cial Cuv and" a champagne end, the aroma of croissants with a depth to the nose depends on the predominance of the pinot noir. Whatever the collection and vintage quality, the cellar master Bollinger, with its assembly experience, must be able to reconstruct this bouquet of aromas. Golden color with subtle highlights. Nose: aromas of stewed ripe fruit, particularly quince, but also a discreet note of honey.These are followed by roasted notes and cocoa, which give way to flavours of star anise and nutmeg. Palate: full-bodied attack. Powerful but well-balanced, with persistent flavour. Mineral finish with touches of lemon revealing a pleasing bitterness.

The final reminded me of bakery flavours. A very nice bodied wine.
In the end, this Bollinger R.D. Récemment Dégorgé is good with a little acidity really pleasant.
