Bollinger la Cote Aux Enfants Ay 2015 (Pinot Noir)
TASTING NOTES:
- View: Intense ruby color.
- Nose: notes of licorice, cherry jam and elderflower that become hints of cocoa.
- Mouth: Bursts of fruitiness on the palate with a rich mouthfeel with a beautiful tannic structure; Endnotes cherry and Kirsch.
APPELLATION: Champagne (Champagne, France).
VINEYARD: Bollinger.
GRAPES: Pinot Noir.
AGEING: Then is aged for a minimum of eight months and a maximum of two years in oak barrels of 205 liters, which are three to five years.
PREPARATION: At harvest, the grapes are classified 'to the clayette' and the harvest is completely destemmed. Made only of the 'jus de goutte' (free juice), this is the first after juice runoff a tank after alcoholic fermentation. Also it called freewheeling wine.
