TASTING NOTES:
- View: bright green yellow.
- Nose: aromas of lemon, citrus and asparagus.
- Mouth: lively and fresh attack with a nice "grain". long finish, both fruity. as mineral, finely mellow
APPELLATION: Chablis.
VINEYARD: Kimmeridgian limestone soil containing trillions of small marine fossils on a white cement which must have been the ocean, makes 130 mln years.
GRAPES: Chardonnay.
PREPARATION: produced according to the precepts of organic agriculture. Grapes harvested manually, pressing slow to respect the fruit.
PAIRING: Flemish asparagus, salmon fillets, sweetbread escalope, sole to the milling or salsa.
ALCOHOL: 12.5%

Joseph Drouhin

With its 73 hectares (182.5 acres), the Joseph Drouhin Domaine is one of the largest estates in the region. It owns vineyards in all of Burgundy: Chablis (38 hectares - 95 acres), Côte de Nuits and Côte de Beaune, (32 hectares - 80 acres), Côte Chalonnaise (3 hectares - 7.5 acres). It is comprised of a majority of Premier and Grand Crus, planted with the two Burgundian grape varietals, pinot noir and chardonnay.
