Domaine Laroche Chablis Saint Martin 2018 (Chardonnay)

TASTING NOTES:

  • View: Golden yellow.
  • Nose: peach, pear, hazelnut, some citrus, floral nuances.
  • Mouth: bodied mouth, fruits multifaceted, well balanced mineral fine, very delicately strong acidity.

APPELLATION: Chablis.

GRAPES: Chardonnay.

AGEING: 6 months in a steel tank.

PREPARATION: after the pressing process air, cooled wort to 12 at 15 °C for 12 hours to form the pellet. Temperature-controlled fermentation in steel tanks for 14 days at 17 °C.

PAIRING: fish soups like Boullabesa, bouillabaisse with rouille sauce with basil, smoked salmon sandwich, apple and two cheeses, assorted seafood dishes.

TEMPERATURE: 8-10 °C

ALCOHOL CONTENT: 12.5%

Chateau de la Roche is situated around a manor house dating back to the 16th and 17th centuries, near the hamlet of Belle Croix, on the old "de la Pucelle" road linking Chinon to Tours used by Joan of Arc before crossing the Indre via the Port Hualt ford, on tuesday April 5th 1429.

The St. Martin Chablis is the most famous white wine of the Domaine Laroche. The Domaine Laroche is headquartered in Chablis, in Burgundy, and extends for about 130 hectares of land in vineyards Grand Cru and Premier Cru, the most suitable areas in absolute. From these thriving vineyards was born on St Martin Chablis, produced from 100% chardonnay grapes; the cultivation of this variety is only done in a sustainable way, avoiding at all costs the use of pesticides and herbicides that may alter the natural balance of grape growing. After the harvest began in September, the grapes are transferred in the basement, where the processing proceeds with the same philosophy: minimizing the human and artificial interveno. The fermentation lasts a fortnight, while aging took place in stainless steel tanks, where the wine matures along with its sediment for about six months. Once filtered and bottled, the wine produced is a sturdy white, mineral and particularly aromatic. It 'a wine that impresses intensity, character and persistence. It is fruity, floral and decided, rich in personality.

It was light yellow in colour. Honey and pollen on the nose. It has an appropriate bitter finish.
We had it with snacks.
My friend tried it somewhere and absolutely recommended it to me.

A Château Laroche to be drank among friendly people.
You almost couldn't apreciate the colour in this Laroche Chablis Saint Martin. It smelled of lemon and apple. It tasted like nothing.
Requires to accompany with seafood from the north.
