William Fevre Chablis 1er Cru Montee de Tonnerre 2017 (Chardonnay)
- View: straw yellow.
- Nose: elegant, pure and airy nose, notes of white flowers, citrus, lime, lemon, a classic Chablis.
- Boca: excellent volume, density and power, refined flavors half body, a persistent.
VINEYARD: Terroir: one of the biggest "Premiers Crus" with a very good exposure and similar to the geological structure Grands Crus.
AGEING: aged for 13 to 14 months, including 5 to 6 months on lees in French oak barrels for 40% to 50% of the cuvée. Raising is completed in small stainless steel tanks.
PREPARATION: use of the principle of gravity to avoid any bomboe that could be harmful wine quality. Pneumatic pressing short (1h30 to 2h00) for gentle separation between solid and liquid parts of the grapes. very slight static stowage to retain sufficient lees for alcoholic and malolactic fermentation may occur naturally.
