TASTING NOTES:

  • View: Intense red with some purple hues. Very clean.
  • Nose: Aromas of ripe fruits of the forest. Strongly perceptible impact hard on the nose, but not become overwhelming. The fund has toasted oak character.
  • Mouth: It has a velvety texture, which makes it extremely seductive. The step is refreshing, with a perfect blend of flavors and acidity in the most appropriate levels.

APPELLATION: Central Coast.

VINEYARD: Birichino.

GRAPES: Pinot Noir.

AGEING: in oak barrels.

PREPARATION: The grapes are harvested by hand at low temperatures, to carry them sorting tables. The macerated chosen to cool for a few hours, with gentle pressing. the liquid is transferred to stainless steel tanks where it ferments before moving into oak barrels to be aged. Finally, it clarified and bottled.

PAIRING: Red meats, strong cheeses, Japanese dishes, some pastas.

RECOMMENDED SERVING TEMPERATURE: 18-20 ° C

The 2016 St Georges derives primarily from the elegant, floral, very small-berried pinot of the decades-old Besson planting at the base of the Santa Cruz Mountains. To its register of expansive red floral notes we add the darkly fragrant Santa Cruz Mountains pinot from the steep slate, schist and sandstone site of Lilo, Arroyo Seco pinot on decomposed granite and shale, and the muscular, brooding, deeply-flavored old selections of pinot planted by the late Dick Graff from 1800' up in the Chalone AVA at Antle Vineyard. These four sites together bring exceptionally textured depth and lifted aromatics to this dynamic Central Coast bottling. Fermentation averaged about 20% whole cluster, with a higher proportion of the Lilo and Antle lots left whole, and after several days in stainless and bins, native fermentation got going, and we put a preliminary blend down to cement tank and neutral barrel in October. We racked just once when final barrel selections were made, prior to bottling unfiltered in July of 2017.
