In 1962 Josep Mata Capellades, in close collaboration with his sons Josep and Antoni, created the Reserva Particular de Recaredo with the original idea of conveying the delicacy and subtle complexity of a long-aged wine without sacrificing freshness and the most authentic expression of time. True to this idea, Reserva Particular de Recaredo interprets the calcareous lands of the Alt Penedès region and shows the deep character of the oldest Xarel·lo and Macabeu vines. Without a doubt, Reserva Particular is a tribute to time and territory.

Reserva Particular de Recaredo is made with the native varieties Xarel·lo and Macabeu from old vineyards planted between 1950 and 1955. The plots are bordered by the Corpinnat area, the birthplace of great sparkling wines in the historic wine-growing area of the Penedès south of Barcelona where the production of sparkling wines according to the traditional method started at the end of the 19th century. The vineyards are grown without herbicides or chemical insecticides and only natural, organic fertilizers are used.

The 2011 Gran Reserva Particular is a blend of 60% Macabeu 40% Xarel·lo and of this Limited Edition only 2,669 bottles have been bottled where the wine has matured in up to 109 months, so almost 10 years. The wine was only released in the last quarter of 2021. The wine is a Brut Nature, so without added sugar or sweeteners.

The 2011 Gran Reserva Particular from Recaredo feels very young with an abundance of beautiful wood notes, aromas of Mediterranean herbs, fennel and anise, freshly baked apple pie. The taste is medium-bodied, but with a silky, velvety texture that seems to grow in your mouth as the extremely small bubbles explode and fill the taste buds. This is so good and incredibly beautiful. Not cheap, but many top champagnes that are often much more expensive can definitely not match. This wine comes in a beautiful wooden box.

Vegan/organic/biodynamic

Since 2006, all 50 hectares of their vineyards are cultivated according to DEMETER regulations. This makes this Cava a certified organic cava. The grapes are picked by hand and fermented separately for each plot in their own cellar. They only use 40% of the must, only the first juice released after bruising is good enough for their cava. The fermentation of the must takes place partly in oak and partly in a steel tank. After fermentation and assembly of the still wine, the bottles are filled and capped with a natural cork. Every 14 months the bottles are shaken and moved to 'move' the yeast present in the bottle. According to Ton Mata, this ensures a better development of the taste. When the bottles are ready for disgorgement, they are moved to Pupitres where they are turned by hand so that the yeast plug slowly descends to the neck.

Only natural corks are used for the bottle aging of all our sparkling wines. The disgorgement is completely manual and without freezing. At Recaredo, skilled craftsmen turn and turn all bottles of Recaredo wine by hand at the naturally cool temperature of the cellars, a method that respects the long aging process and the environment.
