Elaboration of Mirgin 2011

Mirgin 2011

Made from Chardonnay alongside other complementary varieties that allow us to modulate the character of each vintage.

We are trying to extract each variety according to add the necessary characteristics by different production of base wine fermentations combining stainless, oak, macerations ,. . . , And then apply rigorously Méthode Traditionnelle Champenoise with optimal breeding period as each vintage. It is now selling degollar finish.

Cava, like all wines, has an optimum period of consumption. For our cavas, this period ranges from 18 to 24 months from the time of disgorgement, depending on the type of cava. As a general rule, the longer aging cellars in rhyme also enjoy a longer period of optimal consumption.

Therefore, all our cavas are marked with "AD" - Finish behead - along with the exact date of the operation. This transparency ensures that consumers can always taste our cavas within their optimum consumption period.

Disgorging process is carried out at the end of the aging cycle rhyme and, in our case, just before dispatching distribution channels. After aging for 36 months, the bottles are removed manually until they reach the vertical position when the pellet of the second fermentation in the bottle neck.

the neck of the bottle so that, by removing the temporary stopper, the frozen pellet shot out, leaving a clean, transparent and wine dregs freezes. 3-5 g / l of residual sugar in the case of our cava brut, or zero grams per liter in the case of Brut: Then the liquor issue that determines the level of sugar is added cava end .

Alta Alella

Alta Alella

The vineyards at Can Genis are all planted on Sauló soil, one of the key distinguishing factors of Alella's wines. Sauló is an acidic, sandy soil with low limestone content, low organic matter and poor water retention. The estate is just 2 km from the Mediterranean, with the vineyards planted on slopes and terraces between 150 and 300m altitude.

Has a strong colour. Aromas of yeast. It would have been better if it had been cooler than it was. Our fault.
Great wine menu that would go well with a good meat.
We tested this Alta Alella with my club mates.
