Gramona III Lustros Brut Nature Gran Reserva 2012 (Xarel·lo, Parellada and Macabeo)
- View: Pale straw yellow and bright golden hues, a fine bubble slow ascent elegant rosaries.
- Nose: elegant aromatic expression of good intensity. On a background marked notes of aging (nuts, soft spices and lightly toasted), fleshy ripe yellow fruit with hints of white fruit, herbs of Mediterranean forest and light floral notes.
- Mouth: perfectly balanced complexity and structured with a silky, very fresh, tasty, plus the presence of creamy notes and memories of the lees. Carbonic very well integrated and excellent citrus acidity something. A long and very persistent finish, a stark reminder of ripe fruit and a slight minerality retronasally.
VINEYARD: The Xarel·lo comes from a farm 4 hectares of clay soils and Macabeo 1 ha of sandy soils. Both border the river Anoia, river running through the DO Corpinnat del Penedès in its northeast region and are cuidadadas following the parameters of organic viticulture, with a growing apliación early biodynamic agriculture.
GRAPES: Macabeo, Xarel·lo,
AGEING: made the blend, the champagne is bottled with cork and aged for 70 months. Both removed as uncorking are manually performed.
PREPARATION: hand harvested grapes are selected in the selection table. Pressing whole bunches and carry out the fermentation in stainless steel, both varieties separately.
PAIRING: smoked, snacks, poultry, grilled white meat, red meat with sauce, caviar, civet, roast lamb, Iberian ham, grilled seafood, raw seafood and baked white fish.
