Codorniu Extra Brut

We plan the optimal time of harvest for each variety. The first to mature is the Maccabee (in late August), followed by Xarel·lo and finally Parellada (early October). After de-stemming and crushing grapes musts obtain fermented at a temperature between 15 and 17 ° C. Subsequently the blend of wines of different varieties is performed and the resulting wine is bottled with liquor circulation (yeast, sugar and clarifying). The bottles are moved to underground cellars where fermentation slowly, followed by a period of aging in contact with the yeast lees enriches cava expression occurs. TASTING NOTES OF Codorniu Extra Brut:
- View: pale straw yellow. fine, persistent and well integrated bubble.
- Nose: own primary aromas of the varieties used (citrus, almond blossom), honey and toast.
- Mouth: fine and a balanced freshness bubbles.


GRAPES: Xarel·lo, Macabeo and Parellada.

AGEING: 9 months in the cellars in cotacto lees.
PREPARATION: after completing the fermentations three varieties embodiment of an assembly with the resulting wines.

WINE PAIRING: appetizers and tapas.

I especially liked the colour. The Codorniu Extra Brut  gave off aromas of yeast. It tasted like nothing.
A goes fine with snacks.
I like sharing this sparkling Cava with someone special.
My friend brought  it from a visit to Codorníu.
I loved the touch of burnt wood smell.
