The cellars are situated in the heart of Penedes: Sant Sadurní, capital of Cava. Geological structures of the area and the influence of the Mediterranean Sea, determine the geographical boundaries and microclimates of different subareas, as a whole, form the Penedès. The configuration of mountain ranges: Litoral, Prelitoral, "Clot" of Bonastre and mountains of Montserrat, and structural depressions, pits the Penedès, Canyelles and Foix, provide a wide range of soils with significant lithologic differences and composition together the microclimatic peculiarities of each environment are three wine perfectly differentiated subzones. Made with grapes from old vines, over 30 years, low yield and high concentration of aromas, Bayanus 375 is not half a bottle or proceeds from the transfer of another but is a special blend, different from others cavas house, traditional slow fermentation tanks, which performs the second fermentation in the bottle of 37,5 cl. with which reaches the consumer. (Bayanus appeared on the market with the 2004 vintage). Aged for a minimum of 24 months in bottle.
