“Between the Pla del Penedès and Subirats, near Barcelona, in the heart of one of the most important wine regions of Spain, the winery Alsina & Sardà has spread several farms where, depending on the terrain, altitude, climate, etc. Cultivates various grape varieties. To produce this sparkling Cava Alsina & Sardà Brut Nature Gran Reserva Especial, selected the best Xarel·lo and Chardonnay vines and aged between 30 and 40 years to get top quality musts. Each grape mature at their own pace and expected to go by and harvested only when the thing is done. They do it by hand because they want to reach the winery in optimum conditions and so, incidentally, make a first selection in the vineyard. When the grapes reach the winery, they are the look well and gently pressed getting only half the wine, the better. This must, they put in stainless steel tanks, add yeast and leave to ferment quietly and just 15ºC, so that things go slowly and the best aromas and flavors are achieved. When finished, keep the wine in the tanks until they are both fermented wines, Xarel·lo and Chardonnay. Then, mixed wines, bottled with the liquor circulation (a mixture of liquid and sugars) and yeast plug it and the bottles are taken to the winery to ferment again. And there, they spend between 36 and 48 months (3-4 years), sparkling wine in contact with the yeast, taking body, flavor and aroma. When this cava is now ready, the final step, the disgorgement, the bottles uncover leaving out the yeast and solid debris, fill what has been lost more cava and put the final plug. And the result? How do we take it? This Cava Alsina & Sardà Brut Nature Gran Reserva Especial is a sparkling wine that deserves to take care a bit. To appreciate all its nuances, it would be good to serve on 6-7ºC, so that the cup take a little temperature and let out all the aromas.
