The Castel del Monte Tormaresca Pietrabianca of Marchesi Antinori was born in vineyards, organic-run, located in the municipality of Bitonto Minervino Murge, in the heart of the Castel del Monte DOC. It is produced mainly with Chardonnay grapes and grape Fiano di Puglia, collected and selected by hand at full ripeness. After a brief cold settling, the must of Chardonnay fermented in barrels of new French and Hungarian oak at a controlled temperature and aged in oak barrels where malolactic fermentation. The Fiano is fermented separately in steel at a controlled temperature of 16-17 ° C, to enhance the notes of freshness and acidity, and subsequently assembled. Following a further refinement in the bottle for 6 months before being marketed. The Antinori Pietrabianca has a straw yellow color with golden highlights. The nose opens with intense aromas of white fruit, enhanced by delicate notes of vanilla and acacia honey. In the mouth it shows balanced, elegant and fresh. Perfect for appetizers and dishes of fish, it is ideal in combination with shellfish and cheese.
