VINEYARD: Vineyard Seven Oaks was originally planted in their own rootstock, using some of the original indigenous plantations widely planted clones Estrella in Paso Robles. The vineyard soils ranging from clayey soil gravel soils to limestone based on a relatively small plot of land, and used various combinations of rootstocks and clonal to maximize the expression of each individual site. GRAPES: Cabernet Sauvignon 82%, 8% Petite Sirah, Merlot 5% Petit Verdot 4%.
AGEING: Aged for 12 months in American oak barrels, 22% new.
PREPARATION: fermented in stainless steel tanks, with maximum temperatures reaching 35 ° C. malolactic fermentation using Viniflora Oenos, was completed in 20% new American oak barrels, with the rest in stainless steel.
WINE PAIRING: with wild mushroom risotto or lamb with herb encrusted with creamy polenta.
