VINEYARD: Petrilli. The grounds are north of Apulia, in the region of Daunia, near the town of Lucera in Italy. The farm covers an area of 11 hectares, with very rocky soils; It has southern exposure and is always covered with spontaneous vegetation. Its founders, Paolo and Paola Petrilli have lived there all their lives and have created a reputation not only producing wines but also sowing tomatoes. The key to its success are organic crops.
GRAPES: Bombino Bianco, Montepulciano, Nero di Troia, Sangiovese.
AGEING: 6 months in stainless steel tanks. Then left to age in the bottle.
PREPARATION: The harvest of Sangiovese grapes and Bombino takes place in mid-September, the collection of Montepulciano grape in early October and finally the fruit of the Nero di Troia is harvested in late October. Gently pressed grapes leaving half of whole grapes, and must is fermented for 7 days using yeasts.
WINE PAIRING: Can be combined with braised meats, pasta with meat sauce, sausages, pies.
