Jean-Claude Boisset Chardonnay Les Ursulines 2016 (Chardonnay)
- Nose: A fresh bouquet with notes of acacia, honey and yellow fruits.
- Mouth: The palate is very balanced, with good acidity and a silky texture. Citrus, pear and apple blossom are perfectly balanced by good acidity and texture.
APPELLATION: Côte de Beaune, Burgundy.
VINEYARD: Grégory Patriat.
GRAPES: 100% Chardonnay.
AGEING: 14 months.
PREPARATION: The grapes were whole cluster pressed very gently for two hours. The wort is dropped to 12 °C before being transferred to oak, without settling, to retain the maximum amount of lees. The wort suffered a long fermentation using natural yeast. The wine was aged for 14 months without racking, to accentuate its mineral qualities. 10% new French oak barrels were used to impart a subtle complexity and a smooth finish. Again, it is quite rare that a 'Bourgogne Blanc' is 100% aged in oak. Bottling was performed using gravity after application bentonite and a light filtration.
