David Duband Pinot Noir 2018 (Pinot Nero and Pinot Noir)
- View: Clear ruby, violet tones, low layer with good body and density.
- Nose: aromas of peonies.
- Mouth: elegant mouthfeel, very thin and light tannins.
VINEYARD: sueloi silt and pebbles.
GRAPES: Pinot Noir 100%.
AGEING: After 14 months in oak barrels, the wine is decanted into tank where it rests for three months before being bottled. The wine is not clarified nor filtered.
PREPARATION: The grapes are handpicked, sorted and vinified with 40% of whole bunches. During the 17 days of fermentation was performed 5 to 7 steps (remounted walk) and some pumping. After pressing, the wine is left clear for 2 weeks before being put in the barrel (30% new oak barrels and 70% 1, 2 and 3).
WINE PAIRING: As an aperitif, with sausages.
RECOMMENDED SERVING TEMPERATURE: 16-18 ° C
