In the 80 José María Ruiz Benito, an expert, since then, the potential of Ribera del Duero, was the great dream of creating their own wine to accompany the suckling of their restaurant.
In 1987 José María Ruiz conceived the project of building a warehouse in a good area of red wines. I knew that the starting point was to be the vineyard.
Your site was Pago de Carraovejas. It was the first wine from the Ribera del Duero with 25% Cabernet Sauvignon, Tinto Fino when the king was absolute. It also pioneered the use of French oak in the Ribera del Duero.
There are 3 predominant soil types, 3 grape varieties: Tinto Fino (Tempranillo), Cabernet Sauvignon and Merlot, and 3 trellis systems. These factors define the "terroir" and its wines: Pago de Carraovejas Crianza, Pago de Carraovejas Reserva and Pago de Carraovejas Reserva Especial or Pago de Carraovejas Vendimia Seleccionada Cuesta de las Liebres.
1991 gave birth to the first harvest Pago de Carraovejas Today it is the interest to go beyond the farm and now has 5 ha of vineyard terraces in a system pioneered in the Ribera del Duero. This is still in a modernization of the farm, but always with the aim to improve quality and achieve balance in all crops.
All these factors define the label "Pago de Carraovejas" reflected in their wines.
