Colet Cava goes back to 1783, since the Colet family cares its vineyards in one of the most significant parts of the cental Penedès. There Romani Estate dominantes a plain broad and bears witness to more than two hundred years of constant love of the vine and work. The old tradition of the family business opens today at the new contributions in a building where technology and quality meet the current requirements
The reduced production of cava allows us to assure our quality at Colet Cava which we are proud. At its base is a very organic and environment friendly viticulture. In the most suitable for each type of grape microclimate. We use exclusively vineyards of our property (25 acres arable and 80 acres of forest) for making Cava, red wine and white upbringing.
The production system in Colet Cava is the traditional but using all the new techniques of farming in the vineyards, in winemaking, control systems and the 1st fermentation in the production of our cavas.
We grow native varieties (Macabeo, Parellada, and Ull xarel.lo llebre) and foreign (Chardonnay, Pinot Noir, Cabernet Sauvignon, Gewürztraminer and Riesling), the latter two for the development of young white wines.
Our Extra Brut or Brut Nature rests for a long time underground on the desks of the caves, and finally to you without any liquor or added sugar, in all its purity and authenticity
