Domaine de Chevalier

When I have the tie to look back into the past, I like to wonder what life must have been like at the self-sufficient Domaine de Chivaley. I belive that something of that period remains to this day... I made a point of deciding to live at the estate, and now feel in total osmosis with it. The...

2018 - Non contractual picture. Rosé de Chevalier: A rosé from a great vintage! The Rosé de Chevalier and a rosé called "bleeding". It comes from the Cabernet Sauvignon and Merlot for dial red wine Domaine de Chevalier, grand cru Pessac-Léognan. Harvesting is therefore carried out with the utmost care and clusters undergo a triple sorting: they are first sorted in the vineyard which are kept only those that are not damaged, then a first selection cluster is at the table sorting, finally, the berries are sorted by grain. They are then put into tanks which is subtracted, shortly after, some of the juice. This is immediately put in barrels to ferment and there will be high for a few months before being bottled. The Rosé de Chevalier is coming from the best parcels of property and worked with the same search of finesse and quality that the great red wines. Estate Domaine de Chevalier: Domaine de Chevalier was born in the 18th century. It is located on the edge of the city of Bordeaux, on a land of fine gravel.
Property of the Bernard family since 1983, he is advised by Stephane Derenoncourt for red. The property covers 55 hectares of red vines: 63% Cabernet Sauvignon, 30% Merlot, with a complement of Cabernet Franc and Petit Verdot; it also includes 5 hectares of white: 70% Sauvignon, Semillon remains.
These big reds for aging, well-structured, combining minerality, vibrant fruit and subtle spicy notes, with very good aging potential.
The white wines of Domaine de Chevalier offer fine notes of citrus and mineral nuances wonderful. They are also pruned for years in the cellar.
