VINEYARD: Sociedade de Vinhos de Borba S.A. (Sovibor). Founded in 1968, Sovibor is a historical company from the region of Alentejo. It controls the production of more than 170 hectares of vineyards in the Borba DOC. A large percentage of these vines are "Old Vine", which accounts for the high quality of both the grapes and the wine that Sovibor produces. This family-owned business has taken the building's 200 years of history and married that perfectly with tradition, quality, and modernity.
GRAPES: Trincadeira, Aragonêz, Alicante Bouschet
AGEING: Sovibor Borba 2016 is aged in clay amphorae, cement takes, and used wooden vats.
PREPARATION: The grapes are harvested by hand and then placed into small vats for maceration. Ancient winemaking and ageing techniques are the preferred methods for this winery. To that end, traditional pressing and marble lagares are used to make the wine and the wine is then aged in clay amphorae, cement takes, and used wooden vats. This mixture of the traditional with the modern is a hallmark of Sovibor.
PAIRING: This wine is an excellent pairing to enjoy with roasted or grilled red meat.
