A typical Italian recipe, the panettone is a brioche traditionally prepared for Christmas celebrations. Here is an easy recipe to make at home.
INGREDIENTS (6 people)
500 g flour
180 g butter
5 egg yolks
120 g milk
60 g sugar
18 g baker’s yeast
200 g sultanas
60 g honey
1 pinch of salt
A zest of lemon
1 vanilla pod
45 g of Grand Marnier
60 g candied fruit pieces or chocolate chips
In a saucepan, simmer the milk with a vanilla pod cut into small pieces for 10 minutes and leave to cool.
In a salad bowl, mix the baker’s yeast, 5 egg yolks, a grated lemon zest, 60 g of sugar, 45 of Grand Marnier, 60 g of honey, a pinch of salt, 180 g of butter and 500 g of flour.
Add this blend to the vanilla milk, mix and leave to rest for 1h30.
Add the sultanas and candied fruit or chocolate chips to the mixture and place in a charlotte mould lined with baking paper. Put back to rise for 1h30.
Preheat the oven to 180°C and bake for about 40 minutes.
