The scarcity of blue agave is having consequences in the production of tequila


About 15 years ago, the production of tequila entered a crisis due to the worldwide exploitation of this drink, and the little supply of blue agave that existed in Mexico to provide the whole globe with agave.This was causing the price of the plant to rise to stratospheric prices. Today, it seems that history repeats itself.

Tequila is strictly regulated by the Tequila Regulatory Council which imposes the laws and rules on this beverage and its preparation. These standards stipulate that only the blue agave can be used to create the beverage and nothing else. For its part, agave is a plant that has hundreds of types available but the fact that only blue is allowed to make tequila is a problem that is putting the world market at risk.

And, unlike other fruits or plants that are given annually, a blue agave plant takes approximately 8 to 9 years to grow, mature and be ready to create bottles of tequila. The standard formula for producing 1 litre of tequila used to be 6 kilos of blue agave and today it may take up to 10 to generate the same result.

It is expected that within the next 3 years many brands and small tequila houses will disappear from the shelves of the liquor stores because of this problem. And the largest companies in the industry will pay what they have to pay to keep their famous brands available to all. Farmers are selling everything and as soon as their inventories reach zero, it’s over … not many will want to re-plant and wait 8 years for the next crop and sell it with the uncertain price.

According to The Drinks Business, the tequila crisis is real and there can be a shortage of this precious liquor.

6 tips to drink Tequila


Tequila is a very popular drink around the globe. Moreover, it has been demonstrated that consumed in moderation, it’s capable of lowering cholesterol levels, preventing diabetes, senile dementia and even strokes and seizures.  A curious fact about Tequila is that it was used in 1918 as a remedy for an epidemic flu under recommendations of doctors, and proved to be a very effective method.

Tequila is elaborated from a specific class of blue agave which contains some particular features. Keep the following tips in mind to fully enjoy this drink!

  1. Choose a pure tequila: 100% Agave Tequila has a better taste and helps prevent hangovers. If you want to be sure that yours is 100% pure, pick one made by brands like Cuervo, Orendain and Sauza.
  2. Tequila Añejo: Despite being a little bit more expensive, Añejos have aged for at least one year. That provides a better flavor and complexity. If you go for this kind of tequila, remember to drink it at room temperature, neat and in a tequila glass or shot glass called “Caballito”.
  3. Alternate tequila and sangrita: Another option is to alternate a shot of tequila with a shot of sangrita, a traditional Mexican beverage without alcohol that helps to better digest the first shot. If you want to create your homemade sangrita just mix 1 cup of orange juice, 1 cup of tomato juice, 1 dash of lime juice, 1 tablespoon of grenadine and 4 dashes of hot sauce.
  4. Taste correctly: To taste the tequila correctly you should pour a measure of the drink in a shot glass, raise it up to your eyes, look at its color, stir gently and then wait for the liquid to adhere to the walls. Then, take a sip and savor for 10 seconds before repeating.
  5. Drink it with lime and salt: Contrary to the general belief, the majority of Mexicans don’t use lime and salt to drink their tequilas, but it’s an accepted way to do so. The other option is to drink it calmed and pure.
  6. Drink it as a margarita: another way to drink your tequila is by preparing one of the world’s most famous cocktails. For that, you only need to mix 2 parts of tequila with half part of orange liqueur, 1 part of lime juice and half part of agave nectar and ice in a shaker. Enjoy it!

Acapulco cocktail is a drink from Mexico, with and easy home preparation that blends rum and tequila with the citrus flavours of orange. It is usually served in a tall glass or a cocktail glass with the rim previously frosted. Its orange coloured appearance reminds of the sunset from the Acapulco beaches and invites to take a moment in order to give up to enjoyment.


  • 3 ounces white tequila
  • 1 ½ ounces white rum
  • 8 ounces orange juice
  • 2 teaspoons brown sugar
  • 1 orange slice
  • 8 ice cubes


  1. Prepare the cocktail glass putting sugar in a small plate and in another small plate some orange. juice, place the rim of the glass in the juice and then in sugar for frosting.
  2. Place tequila, rum, orange juice and ice in a shaker.
  3. Stir for a few seconds and strain the result in frosted glasses.
  4. Garnish with a slice of orange on the rim of the glass.

What makes different tequila and mezcal?


While tequila is a very popular drink worldwide, not everyone knows that it is only one of the varieties of mezcal. Tequila and mezcal have differences in their place of origin, processes of elaboration and even the correct way to drink them.

Mezcal is a drink made with agave using traditional methods and is divided into white, rested and aged, according to the time of aging in wooden barrels. In contrast, tequila is only made with the variety of blue agave and industrially, it is divided into pure and mixed, and is aged from 2 months to 7 years.

Other significant differences between mezcal and tequila are:

  • Appellation: While mezcal is produced in Oaxaca, in southern Mexico, Durango, Guerrero, San Luis Potosí, Zacatecas, Guanajuato, Tamaulipas and Michoacán, tequila is produced in the territory of the same name in Jalisco, in addition to Guanajuato, Michoacán, Nayarit and Tamaulipas.
  • The type of agave: For the elaboration of mezcal can be used 14 different types of agave and even mix them, while for the production of tequila only the blue type of agave -called ‘tequilaza weber’- is allowed.
  • The composition: While mezcal is made from 100% agave and chemical free, tequila can contain up to 49% sugars and other compounds.
  • Elaboration: Mezcal is made using traditional methods with underground ovens, while the tequila is made industrially with copper stills.
  • Taste: The taste of mezcal is strong and aromatic, while the taste of tequila is neutral.
  • Appearance: You can recognize mezcal easily, as it has a worm inside the bottle, while tequila don’t.
  • How to drink it: While tequila is drank in a shot after a bit of salt and lemon, mezcal must be taken into ?caballitos? (little horses), called this way by the use of horns like glasses by the ?jimadores?.
  • Export: Only in 2013, tequila had as major consuming countries the US, UK, Germany, France and Spain, with 126.6 million liters, while mezcal had as main consumers Chile, United States, United Kingdom, Australia and France, with 617,000 liters.
