Pumpkin is one of the most loved and versatile seasonal products. Today we suggest you the easy recipe of a pumpkin risotto, with a combination a little bit out of the rules!
- 150 g of rice
- 200 g of pumpkin
- 1 onion
- ½ litre of vegetable or chicken broth
- 1 glass of white wine
- 1 teaspoon of butter
- 30 g of grated Parmesan cheese
- Salt and pepper
Start by cleaning the pumpkin and cutting it into cubes. Melt the butter in a pot, then add the chopped onion. Once the onion is golden brown, add the pumpkin and the rice. Season with salt and pepper and add the white wine while continuing to stir.
Add the broth – preferably hot – whenever necessary, and never stop stirring. Be careful not to add all the broth at once!
Once the rice has reached the desired consistency, remove the risotto from the heat and mix it with the Parmesan cheese. Serve still hot with grated cheese on top.

- 3 cl of Bitter Campari
- 3 cl of red Vermouth
- Orange slice
- Lemon peel
Fill a low tumbler glass with ice, then add the Bitter Campari and the red Vermouth. Fill with soda and add the orange slice (essential!). Decorate with lemon zest.
