Historical winery in Castiglione Falletto, wine firm Paolo Scavino was founded in 1921 by Lorenzo and his son Paolo Scavino. Today it is run by the fourth generation of the family.

With a little less than a century of experience, the winery Paolo Scavino focuses its attention primarily on the Nebbiolo grape that is interpreted and exalted in order to communicate all the minimum characteristics of each cru.
At nebbiolo, however, they are flanked Dolcetto and Barbera.

The low yield of this vineyard is due to a special combination of natural factors one of which is the old age of the screws which ensure a unique quality.

Maceration and fermentation in stainless steel tanks with controlled temperature and yeasts, then malolactic fermentation in oak barrels.
Aging for 12 months in steel tanks, 10 months in French oak barrels, 14 months in barrels, then 10 months in bottle.
