Wine-making: de-stemming and crushing followed by maceration. The alcoholic fermentation begins spontaneously by means of yeasts and takes place at a controlled temperature with daily pumping in stainless steel tanks. The wine Barolo DOCG dell'Abbona begins with de-stemming and crushing, followed by skin maceration. The fermentation in contact with the skins in steel tanks at an ideal temperature. After monolactic, followed by aging for up to 24 months and bottling.
